The uniqueness of the Darling Hills terroir is undisputed.   Pockets of eroded granite type soils are selected as close as five kilometers from the cold Atlantic Ocean, at altitudes between one hundred and fifty and three hundred meters above sea level. 
Soil preparation is thorough, and maximum root development for nourishment and optimum water usage of the vines is essential.  We do not irrigate and therefore the clay content of the deep red soil is such, that it retains the moisture from the winter rains through to the dry summer months until harvest time in February.  A warmer micro climate prevails around the berries of bush vines. This initiates a shorter ripening period, resulting in a fruitier juice. Most of our vines are trellised and this allows the afternoon breeze to move beneath the vines, cooling them down, bringing a balanced natural acidity and freshness to our wines. We keep viticulture practices simple and with continuous consultation, training and evaluation exercises involving all levels of our workforce, we maintain our pursuit of quality every day of the year.

Ormonde Tasting Note 
This is a single vineyard wine, reflecting the best terroir on Ormonde and showcasing the oldest vineyard.
Intense Red berry flavours with hints of vanilla and spice complemented by a rich black pepper character on the palate. Balanced palate with good acidity and soft tannins. Aged for 15 months in 1st and 2nd fill French Oak barrels, 30% new oak. Small berries, the result of dry land conditions contribute to a full bodied, extracted palate. Rich warm aromas indicate the picking of the grapes when it was phonologically ripe.
