Description
Long before David and Cindy Lawson founded Covington Cellars, they shared a passion for wine, food and travel. David was a home winemaker and Cindy a home cook. Then they took their interests to the next level– David studied Enology at UC Davis, and Cindy studied the culinary arts and the art of wine and food pairing at various culinary schools around the country. Today the couple shares their passions with other enthusiasts through their wine and supper club, wine blending workshops and of course the wine club. David and Cindy share their time between Covington and Woodinville and share their home with their three dogs Starr, Chance & Mia.
Covington Cellars Cabernet Sauvignon 2011
Wine Enthusiast Tasting Note
“Coming from a cool vintage, this wine plays to the grape’s more savory side. Aromas of garden herbs emerge in front of cherry, cedar and damp earth. It’s reserved in style but with depth to the dark fruit flavors and well-integrated tannins. Score – 90.
France44 Tasting Note
Firm tannins underpin a lively and generous burst of flavors, with notes of raspberry, pomegranate and white pepper, riding easily past hints of sage and bay leaf. This needs time to come together, but the balance is there.
