For OOLA owner and distiller, Kirby Kallas-Lewis, OOLA is a labor of love, intellectual curiosity and commitment to the neighborhood he has called home for more than two decades. Kirby has been studying the art and science of distilling intensively. He has participated in numerous workshops, tastings, and conferences on the topic of craft distilling by some of the leaders in the industry. A former artist and tribal art dealer, Kirby has long been interested in the power that great food, wine, art, cocktails and entertaining have in connecting people to each other and to a place.
Oola Gin
Oola Distillery Tasting Note
Clear. A very complex and aromatic nose of citrus and rose perfectly balanced with a subtle scent of juniper berry. On the palate the citrus and floral notes come through the juniper first, followed by coriander and cardamom on the mid-palate. The lengthy finish shows hints of caramel and vanilla, reminding us that this gin was made with a base of Oola Vodka.

Scoring an impressive 9 out of 10, our tasting panel was blown away by the OOLA Gin. Upon first smell you get a beautiful nose of citrus and rose with a soft touch of juniper berry. Our first sip gave us a lovely taste of citrus and floral notes which were soon followed by coriander and cardamom. The lengthy finish gave off subtle hints of caramel. Some tasters on the panel noticed a hint of vanilla on the finish as well. For avid gin drinkers you will certainly enjoy this spirit neat or poured over ice, it is simply delicious and needs no outside addition.

Oola gin is their take on the traditional European, juniper-flavored spirit.
They use a balance of rose and citrus in their botanicals, which to us implies a relaxed juniper flavor and putting the gin in the new, modern class of gin. Oola Distillery is located in Seattle, Washington founded and run by Kirby Kallas-Lewis in 2011. They pride themselves on being a “grain to glass” distillery in that they perform every stage of the spirits process rather than rectify neutral grain spirit or otherwise pre-purchase product.
